Lemon Spiced Bean PickleEdit

1 Lb. Green Beans

1 Lb. Yellow Beans

2 1/2 C. Cider Vinegar

1 1/4 C. Water

1 Tbsp. Pickling Salt

1 Tbsp. Granulated Sugar

1 Tbsp Pickling Spice

3 Strips Lemon Rind

Wash & trim beans into 4 inch lengths to fit in to jars.

Combine vinegar, water salt and sugar in a medium saucepan and bring to boil over high heat.  Add beans, cover and return to a boil; boil for 1 minute.  Remove beans from saucepan with slotted spoon, reserving liquid.  Return liquid to a boil.

Remove hot jars from canner and place 1 tsp. pickling spice and 1 strip of lemon peel in to each jar.  Pack in beans and pour boiling liquid into jars to within 1/2 inch head space.  Process 10 minutes.  Makes 3 pint jars.
